Central African Republic - Spinach stew

Healthy plant-based peanut butter spinach stew for the win!

Aneri's note: So I represented C.A.R. at a Model United Nations conference in college. It was my first time learning about this country, usually when you get a country like this there is very little you can do at a model UN conference.

 

Spinach Stew

Difficulty level (1-10): 3


Simple name, but a tasty dish!


Ingredients

Onion - 1, diced

Oil - 2 TB

Tomatoes - 2, peeled and sliced

Green bell pepper - 1, chopped

Spinach - 2 lbs

Salt - 1 tsp

Chili pepper - 2

Peanut butter - 4 TB


1. In a heavy skillet or stew pot, saute onions in moderately hot oil until golden. Stir in tomatoes and green pepper and chili.

2. After a minute or so, add spinach, salt. Cover, reduce heat, and simmer for 5 minutes.

3. Add peanut butter to the pot. Continue cooking for another 10-15 minutes, stirring frequently, and keeping a close watch to prevent burning. Add small amounts of water as necessary so that the stew doesn't stick to the pot bottom.

4. Serve with rice or a stiff porridge.
