Botswana - Morogo

Leafy plant-based stew

Aneri's note: I have not been to Botswana, but have only heard good things. Botswana is a bit of a success story post-HIV and economic development with a booming tourism industry to boot!

 

Morogo

Difficulty level (1-10): 2


Morogo is an easy vegan spinach stew, typically served as a side. Morogo is specifically a type of wild spinach found in Botswana, but since I do not have access to it I used regular spinach.


Ingredients:


Spinach - 3 cups

Onion - 1/2, diced

Tomatoes - 2, diced

Oil - 2 TB

Salt - to taste

Curry powder- 1 TB

Rice - 1 cup, cooked


1. Add 2 TB of oil to a frying pan and fry the onion with curry powder until soft.

2. Add washed spinach and salt, cooking for 10 minutes

3. Add tomatoes and let it boil down and stir

4. Serve hot with rice
